Chicken Lo Mein Stir Fry

This is a staple in my kitchen! The recipe varies based on the season. I try to use the seasonal veggies on hand. This recipe uses zucchini and summer squash, two veggies that are in abundance this time of year! Here's how I make it: -Prep & cut veggies, cut and mince onions & garlic. -Dice chicken, toss in cornstarch to coat evenly. -Heat skillet to medium heat, add cooking oil of choice or butter. -Add onion and garlic, cook about 2 minutes. Then add remaining veggies. -Cook about 7-8 min, adding salt & red pepper flakes. -Set a pot to boil for the noodles. At this time, add the coated chicken to the skillet. -Cook chicken about 7 minutes before turning. -Once water boiling, add the desired amount of Lo Mein Noodles. Boil until soft, around 8 min. _Once noodles are cooked, drain and add to the skillet. -Add soy sauce/coconut aminos to skillet, and stir to combine. -Allow to cook flavors into noodles for a few extra minutes, and then enjoy!

Ingredients:

2 pounds of chicken breast -- 1 med sliced zucchini -- 1 med sliced yellow squash -- 2 med shredded carrots -- 1 pound of Lo Mein Noodles -- 1/2 cup soy sauce/coconut aminos -- 1 Tbsp minced garlic -- 1 Tbsp minced onion -- 1 Tbsp red pepper flakes -- salt to taste

BBQ Grilled Cheese Sandwiches

These have been my go-to weekend meals for busy days! So simple, savory, and cheese! Who doesn't love that! Yum! Here's how I make them! •I throw a roast, beef or pork in the oven in the morning. Cook it on low all day 220⁰F for about 8 hours. You could also roast a chicken and shred it. Any shredded meat will do! •When I'm ready to make supper, I take it out and shred it using my hand mixer, I have found this to be easiest especially when it's still hot! •Add your favorite BBQ sauce to the shredded meat, making it as saucy as you please! •Heat your lightly oiled skillet to medium-low heat. I say lightly oiled because the buttered bread will ensure it does not stick. •butter 2 slices of bread and lay one butter side down in the hot pan. •place a slice of cheese on the bread in the pan, allow to cook for about 5 min. •Add a layer of the BBQ meat, the second slice of cheese, and the second slice of bread. •Press down using your spatula to adhere all the saucy-cheesy goodness, and flip carefully! •Cook this side about 5-7 min to get a golden toast on your bread. Flip and continue fo toast the other side if needed! Enjoy!

Slow roasted Beef, Chicken, or Pork, shredded -- Your favorite BBQ sauce, as much as you like! -- Your favorite bread, 2 slices per sandwich -- Butter -- 2 slices of cheese per sandwich

Pork & Cabbage Skillet

This meal is one that reminds me of spring! I love this dish and it is so easy and fast. This recipe makes about 3 servings. Here’s how I do it! 1. Heat pan to medium heat, and then add your butter or oil. Once heated, add the sausage. 2. Cook sausage about 8 minutes and stir around occasionally. 3. Once sausage is lightly browned, add cabbage and carrots. 4. Add some more butter and cook until cabbage and carrots are softened to your preference! Enjoy
